My Organic Dinner (Snack) Late Last Night

I try to eat dinner as early as possible (ideally before 8PM), but last night it just didn’t work out that way.

So, I had a choice.

I could either go to bed hungry and not sleep well, or eat something, even if it meant doing so later than I would have liked. As you can probably tell, I chose the latter.

My dinner needed to be something light and nutritious but not overly filling. What I came up with was avocados, tomatoes, sauerkraut, and black sesame seeds.

No dressing or lemon was necessary because the sauerkraut and black sesame seeds gave the dish all of the flavor that it needed.

This quick meal satiated my hunger but didn’t sit in my stomach like a plate of pasta would have.

If you’re looking for something light, give this combination a try. It tasted great and was super-easy to put together.
