Fettuchini Made from Organic Mung Beans – An Interesting Idea

For pasta purists, the thought of fettuchini made from organic mung beans is nothing short of heresy.

Yet for people who are constantly seeking alternatives to white or whole wheat pastas (you can put me in this category), a mung bean product is intriguing.

I’ve eaten plenty of non-traditional pastas, such as brown rice, spelt, vegetable, and quinoa, but I cannot recall ever eating a pasta made strictly from beans.

And organic mung beans nonetheless, one of my favorite beans.

THE TASTE

When you’ve eaten pasta your entire life, you come to expect a certain taste and texture, even if it is brown rice or quinoa pasta.

However, the gluten-free, organic mung bean pasta by Explore Asian threw me for a loop for several reasons.

1) It was much more chewy than I had expected. The pasta did not melt or easily breakdown in my mouth.

2) It was much more filling than I had expected. I didn’t need to eat much at all before I was full.

However, I continued eating once I was full because I was just not used to eating a 1/2 bowl of pasta. I’m accustomed to eating an entire bowl of pasta and wanting more.

3) I am not sure why but it had a “cheesy” taste to it.

The only two ingredients are organic green mung beans and spring water from a remote part of Northern China. So, I can’t explain why I had this reaction but I did.

MY TAKE

I truly appreciate the innovation of this product and like the fact that there is another gluten-free, organic pasta product on the market. Additionally, I love that the company is using mung beans.

For people who are accustomed to and prefer the taste of a grain pasta (wheat, rice, quinoa, etc..), this would not be for them.

However, for those individuals who are looking for something different out of a pasta, want to incorporate more beans in their diets and want to eat a protein-rich meal in less than 10 minutes cooking time, this product is definitely worth a try.
