My Dinner at Home the Other Night

A few days ago I had a very late lunch, so I only wanted to eat a light dinner.

As you can see it was nothing more than organic tomatoes, avocado, walnuts and black sesame seeds. For a dressing, I took a biodynamic lime and squeezed it all around.

After having gone to see Dr. Joel Fuhrman recently, I have started to eat more nuts with my salads because he claims that they enhance absorption of micronutrients. Plus, nuts add a whole new dimension to the taste of a salad.

So, here it is. Easy to prepare, inexpensive, delicious.

I am a simple eater and don’t need or want heavy sauces, dressings or spices. A very basic dish like this makes me quite happy.
