On the final night of the Seed Food & Wine Festival in Miami, I was fortunate to have had the opportunity to attend the While Lotus Dinner Experience with Matthew Kenney.
Renowned chef Matthew Kenney, who co-founded Pure Food & Wine in New York City and now has sprawling plant-based empire throughout the world, flew into town and prepared a delicious four-course meal. This served as a preview for his Miami-based raw food restaurant White Lotus, which is expected to open in 2015.
Here’s the delicious food that we had.
MANGO SOUP WITH HERB STEMS AND SMOKED PAPRIKA OIL
SMOKED TOMATOES WITH CHIMICHURRI AND BRAZIL NUTS
“ROASTED” MAITAKE MUSHROOMS AND BRASSICAS WITH A BBQ CARROT DRESSING AND CILANTRO LIME
CHOCOLATE DIPPED BANANA WITH COCONUT SORBET AND SEA SALT
In typical Matthew Kenney fashion, the food was fanastic, fresh, and extremely inviting. I particularly loved the tomato salad and maitake mushrooms, and needless to say, I can’t wait for White Lotus to open up next year in Miami.
To eat such great food and to be surrounded by so many fantastic people made for a really special night and a wonderful ending to the Seed Food & Wine Festival.
