Ever Heard of Einkorn Pasta? Well, You’re Not Alone

I get a lot of emails from people wanting me to review their products or asking me if I want samples.

While it is not always the case, these products usually fall into one of three categories: 1) they’re not certified organic; 2) they’re a nutriceutical; or 3) they’re something that I know of already.

For the most part, I learn about new products at industry trade shows, such as Expo West, or when I’m at organic supermarkets scouring the shelves.

Recently, however, I was contacted via email from someone who wanted me to take a look at einkorn pasta.

When I read her note, I did a double take.

I said to myself, “Einkorn pasta? I’ve never heard of this before. What the heck is it?”

The History

According to Jovial, the company behind this line of organic pasta, einkorn is the very first species of wheat to be domesticated from the wild by humans and is over 12,000 years old.

Einkorn disappeared over the centuries, probably because other varieties of wheat produced higher yields. I am sure it didn’t help that einkorn’s protective layer made harvesting more difficult and time-consuming.

Nutritional Benefits

Since einkorn is the first species of wheat and is not a hybrid, it would seem to make sense that its nutritional value is higher versus other well-known types of wheat.

Jovial says that einkorn is:

– High in Thiamin, and essential dietary and trace minerals
– A good source of protein, dietary fiber, a number of B Vitamins and Lutein, the powerful antioxidant
– Higher on the ORAC chart (Oxygen Radical Absorbance Capacity) than durum and bread wheat
– Higher content of proteins, tocols and carotenoids than other species of wheat
– Suffers a lower percentage of nutrient loss during processing

The Taste

I found the taste to be very hearty and it had a real depth of flavor.

While it was definitely not chewy, there was a real bite to the einkorn pasta — something I enjoyed very much.

The biggest impression that the einkorn made on me was that I felt as if I were eating a very, very healthy pasta. And this is something extremely important when it comes time to deciding what I am going to eat.

Don’t get me wrong, I love good-tasting food but what I eat must be healthy.
