The Organic Food That I Ate at the Wanderlust Yoga Festival in Stratton, VT

This past weekend, I attended the fantastic Wanderlust Yoga Festival in Stratton, Vermont. If you are a yoga person, definitely try to go to one of these events. It is pretty spectacular. There was plenty of organic food available (a must, for me), and here is a sampling of some of the organic meals that I had.

ORGANIC PASTA WITH VEGETABLES AND SALAD

This dish I had on Saturday night’s Farm-to-Table dinner. Everything at the dinner was purchased from the Vermont region and everything was so, so fresh — from the hydroponic tomatoes to the fingerling potatoes and from the crisp lettuce to the juicy strawberries.

 

ORGANIC MIXED VEGETABLE CURRY WITH SALAD, JASMINE RICE AND A POWER BALL FOR DESSERT

This delicious meal I had a few times and was from Krishna Kitchen, an organic food vendor who came specifically for Wanderlust.

ORGANIC SPINACH SALAD

This organic spinach salad was made with quinoa, goat cheese, dried cherries, raw almonds and an enzyme kefir lime dressing.

ORGANIC QUINOA AND SHITAKE MUSHROOM PORRIDGE

I had never eaten warm quinoa porridge before but this is something that I definitely have to learn how to make for breakfast. Very filling and inventive.

ORGANIC CASHEW CHEESE PIE

This pie was made from cashew nut cheese, coconut butter, sunflower seeds and walnuts.

Tomorrow, I will be putting up the interview I shot with Schuyler Grant, one of the founders of Wanderlust, on the importance of organic food at her yoga festivals.
